Ingredients:
- 3 cups raw cashews
- ½ cup dried cherries
- 3 medjool dates
- 1.5 tablespoons raw cacao powder
- 1 tablespoon almond meal
- 1 tablespoon coconut oil
- 1 tablespoon pure maple syrup
- 2 tablespoons almond meal, extra – for rolling
Place all ingredients (except extra almond meal) in food processor. Process until the mixture comes together nicely and can be rolled into balls. If the mixture is too dry, add a small amount of extra coconut oil and process again. Roll mixture into tablespoon sized balls and roll in extra almond meal. Refrigerate until firm.
