
Raw Chocolate Peanut Butter Slice
If you have sweet cravings this slice is pure heaven!
Ingredients:
Base:
- 1 cup raw cashews
- 1 cup raw almonds
- 3 tablespoons raw cacao powder
- 12 Medjool dates (pitted)
- 2 tablespoons coconut oil
- ¼ teaspoon salt
Top:
- ¾ cup raw peanut paste / butter (crunchy)
- 3 tablespoons raw cacao powder
- 2/3 cup coconut oil, melted and cooled
- ¼ cup pure maple syrup
Put the almonds in a food processor and whizz until finely ground. Add cacao powder, dates, salt, and coconut oil and whiz until combined. Add cashews and pulse just until cashews are slightly broken. Press mixture into 20cm square pan lined with baking paper (if you don’t line the pan with baking paper you won’t be able to get the slice out of the pan) and refrigerate for an hour. Spread the peanut butter evenly over the base. In a small bowl, combine the coconut oil, maple syrup and cacao powder. Spread over the slice making sure to cover all the peanut butter. Refrigerate for 2-3 hours to set. Remove from pan and cut into squares. Store in refrigerator in an airtight container for up to 5 days.
